Similar to the Reece Peanut Butter Balls this is another go-to snack in my house. I love coconut, as does my mom, so for her I created these delicious little treats.
Prep Time: 10 minutes
Set Time: 30 minutes
Ingredients:
1 C Quick Oats
3 TBSP Hemp Hearts
3 TBSP Chia Seeds
1/2 C Almond Butter*
1/3 C Shredded Coconut
1/3 C Dark Chocolate Chips
1/3 C Dried Cherries
1/8 to 1/2 C water
*For this recipe I use the PB2 Almond Butter and start with about 1/4C of water, adding more water to reach the right consistency.
Combine all ingredients, except the water in a medium sized bowl. Mix with a spoon. If too dry add ~1/8 cup of water, continue to slowly add water to reach desired consistency; you basically want this feel like wet sand, so when you roll into a ball it holds form but otherwise falls apart.
For the best results allow to rest for 20-30 minutes. Roll into a ball. You can also squish these into a mini muffin tin.
