Rol always says, who eats something that can be used as currency? I do that's who. Yes, dates were once, and probably still are, used as currency. They are also sweet, soft, and delicious. It's a natural energy source that I also use to make treats.
Dark chocolate covered dates stuffed with nut butter, and extra stuff, is one of my favourite things to eat. It's a sweet, but not too sweet, treat that packs a great micronutrient punch. I brought this down to a workout and all 12 dates were gobbled up in the span of about 2 minutes. And those taste testers said it was the best recipe I had brought to date.

Ingredients:
12 Dates
1 TBSP Hemp Hearts
1 TBSP Chia Seeds
2 TBSP PB & Me Almond Butter
2 TBSP Shredded Coconut
1/2 - 3/4 C Dark Choc
1-2 TBSP Water
Mix PB & Me with Hemp Hearts, Chia Seeds, and Coconut. Add water slowly so that the mixture does not become too wet and runny. It should be the consistency of regular nut butter.
Slice open the dates and remove the pits and stem if still attached. Stuff each date with the nut butter mixture so that it is just spilling over the slice.
In a double boiler* melt the chocolate. Cover a plate or small baking pan with wax paper, parchment paper, or silicon baking sheet. Put this beside your chocolate. Dip each date into the chocolate mixture and place on your tray.
Once all the dates are dipped in chocolate place the tray in the freezer for about 20 minutes to let chocolate set.
I keep these in the freezer in a sealed container and usually melt 1 or 2 as a midday or late night snack. These will keep for up to 6 weeks in the freezer.
*If you do not have a double boiler, use two pots. Put about 1" of water in the bottom pot and heat. Do not let it boil as it can burn the chocolate.
