There is nothing worse than being hungry and staring into the fridge wondering what to eat. Usually snack time for me is the hardest with not wanting to consume a full meal but wanting to eat something quickly that's packed with a balance of the macronutrients that leaves me satiated.
My dad is a huge fan of Reece Peanut Butter Cups and Pieces. I have so many great childhood memories of sharing this snack with him. Both of us are health conscious, wanting to pack in all the best nutrients as possible so I came up with this easy to make snack for him.
Prep Time: 10 minutes
Set Time: 30 minutes
Ingredients:
1 C Quick Oats
3 TBSP Hemp Hearts
3 TBSP Chia Seeds
1/2 C Peanut Butter
1-2 TBSP Cocoa Powder
1/3 C Reece Peanut Butter Minis
1/4 to 1/2 C water
Combine all ingredients, except the water in a medium sized bowl. Mix with a spoon. If too dry add ~1/8 cup of water, continue to slowly add water to reach desired consistency.* For best results allow to rest for 20-30 minutes. Roll into a ball. You can also squish these into a mini muffin tin.
Store for 3 days on the counter or in the freezer for up to 3 weeks. Trust me they will not last 3 weeks in the freezer.
I usually consume 2 of these immediately after a hard workout. I will eat one of these to tied me over when I need a calorie hit.
Makes: Ideally 12 (Every time I make this recipe I end up with 11).
