While a cup of hot chocolate is one of my all-time favourite and winter go-to's for a recovery snack, I wanted to package this up for the holidays and give the gift of hot chocolate in a cookie.
Disappointed in what I found online I put together this recipe while out for a winter, urban hike. Taste tested approved by Rol.
Prep time: 15 minutes
Bake time: 10 - 12 minutes
Yield: ~48 cookies
Ingredients:
1 C softened butter
3/4 C dark brown sugar
1 tsp vanilla
1 egg
1.75 C flour
3/4 C hot cocoa mix
1 tsp baking soda
pinch of salt
1 C mini marshmallows
1/2 C chocolate chips
Cream together the butter and sugar.* Drizzle in vanilla. Once combined add in the egg. The mixture will seem a little fluffy and separated, don't worry it comes back together when you add in the flour mixture.
While the wet ingredients mix, whisk together the flour, hot cocoa mix, baking soda and salt. Yes, add salt. The pinch of salt is there for a chemical reaction, trust me your cookies are better with it!
In two batches add the dry ingredients to the wet ingredients.
Once combined remove the paddle. Using spoon or spatula (I prefer spatula) add in mini mashmallows and chocolate chips.
Using a teaspoon spoon on to a prepared baking sheet. Either spray, parchmen of silicon sheet lined (I use silicon baking sheet).
Bake for 10-12 minutes or until marshmallows are puffed and brown. Cool completely on cookie sheet.
*I switched to using the paddle attachment on my stand mixer and I was really the results of my cookies.
